Veggie Burgers, sandwiches and pizza can sometimes be a healthier option when eating out, and today is the perfect time to try a veggie meal for World Vegetarian Day.

October is known as Vegetarian Awareness Month. The International Vegetarian Union says it's 'To promote the you, compassion and life-enhancing possibilities of vegetarianism. It brings awareness to the ethical, environmental, health and humanitarian benefits of a vegetarian lifestyle.'

Dietitians says sometimes eating a vegetarian meal can bring more balance to your diet, and help your family try new things. Here are three different vegetarian recipes you and your family could try.

Ingredients (makes 6 servings)

1/3 cup uncooked long grain white rice

2/3 cup water

2 tablespoons vegetable oil

1 pounds zucchini, cubed

1 cup sliced green onions
