Carlo Acutis, a Catholic Italian teenager who passed away in 2006, was beatified recently in Assisi. A gamer and computer programmer who loved soccer and the Eucharist, he has been the subject of interest around the world. So who was Carlo Acutis? Heres what you need to know:

Carlo, dubbed the cyber apostle of the Eucharist, was born in London to Italian parents, and moved to Milan with them as a young boy. From a tender age, Carlo seemed to have a special love for God, even though his parents werent especially devout. He loved to pray the rosary.

While his peers spent their spare time hanging out with friends, Carlo utilized his time by drawing closer to God. He attended daily Mass and asked his parents to take him on pilgrimages.

Skilled in film editing and computer programming, Carlo set up a website where he researched and documented miracles attributed to the Eucharist. The millennial, whose body lies in state in Assisi, dressed in a tracksuit and trainers, also warned his contemporaries that the internet could be a curse as well as a blessing.

An inspiration to so many, including young children and teens, Carlo died a young boy at the age of 15 after a brief battle with leukemia. He offered his sufferings forPope Benedict XVIand the Church, and was buried in Assisi, at his request, because of his love for St.Francis of Assisi.

His console of choice was a Playstation, or a PS2, which was released in 2000, when Carlo was nine. Reports say he only allowed himself to play games for an hour a week, as a penance and a spiritual discipline.

He was designated Venerable after the Pope approved a miracle involving the healing of a Brazilian boy suffering from a rare pancreatic disease. The boy came into contact with an Acutis relic, a piece of one of his T-shirts.

I really appreciate a recipe where the sauce is the best part of the dish. Butter chicken? Yes, please, Ill take a bowl of sauce and a piece of naan for dipping. And the wine-infused gravy from my familys chicken and mushrooms is basically liquid gold, perfect for dunking chunks of crusty bread.

Id put coconut-based Thai curries in the same category. Give me a generous pour of curry liquidred, yellow or greenand a plate of jasmine rice, and Im a happy camper.

Youll agree once you take a slurp of this green curry from cookbook author Leela Punyaratabandhu. Of course, what makes the sauce is the curry paste, and youll need a good one, preferably from Thailand.

I can appreciate the impulse to make your own paste, and initially thats what I wanted to do with Punyaratabandhus recipe. But after a couple of fruitless calls to my local Asian markets and largely striking out online (makrut limes are especially hard to come by), I decided to take Punyaratabandhu up on her suggestion that commercial pastes are the best way to get the traditional flavors if you cant acquire the right ingredients to make your own. Plus, at only a few bucks for a whole container, its a cheaper upfront investment than buying everything individually, particularly if youre not sure youd use up all the components. Asian markets and some well-stocked grocery stores carry curry pastes from Thailand. Brands to look for include Mae Ploy, Maesri, Pantai, Nittaya and Lobo. Maesri, for example, is available at some Wegmans, and some Targets carry Mae Ploy.

One other ingredient note: If you cant find round green Thai eggplants, which should be at most Asian markets and even some farmers markets, I tested the recipe with halved and sliced long Asian eggplants. They cooked up softer than the Thai variety, which wasnt necessarily bad, but you may want to knock back the cooking time a bit to account for the difference.

Once you have your ingredients in hand, its pretty much smooth sailing with this one-pot meal that comes together in just about an hour. The beef (boneless, skinless chicken thighs work well, too) essentially poaches in the aromatic, rich liquid. That leaves the meat beautifully tender and also means it infuses the broth as much as the broth infuses it.

As to that broth, it includes coconut three waysoil, milk and cream (the solids that rise to the top of a can of coconut milk, dont mistake it for cream of coconut). Low-fat this is not, but you can certainly control how much liquid you include in your portion, even though its pretty hard to resist. If you do manage to end up with extra, youll be left with a next-day treat that I can confirm is fantastic on its own poured over rice, or any other grain or stir-fry your heart desires.

Thai curry just as good or better than your typical takeout is within reach, thanks to this one-pot recipe. The key here is to buy a good Thai curry paste. Cookbook author Leela Punyaratabandhu says commercial pastes are the best way to get the traditional flavors if you cant acquire the right ingredients to make your own. We decided to take her up on that suggestion.

We also tested the recipe with chicken (boneless, skinless thighs), which worked well. Round, green Thai eggplants can be trickier to find, but we found that long Asian eggplant was a fine substitute, though they do tend to cook up softer.

Youll need two 14-ounce cans of coconut milk for this dish. For the cream, skim off the thick top without stirring. For the milk, stir the contents of the can together to incorporate.

Serve with plenty of rice, preferably jasmine, to soak up all the flavorful cooking liquid

Storage Notes: Leftovers keep well in the refrigerator for up to 3 days.

Where to Buy: Most Asian markets and some well-stocked grocery stores will carry curry pastes from Thailand. Brands to look for include Mae Ploy, Maesri, Pantai, Nittaya and Lobo. Maesri, for example, is available at some Wegmans.

INGREDIENTS

8 ounces round Thai eggplants, stemmed and quartered through the stem end (see headnote; may substitute Asian eggplant, halved vertically and cut into 1/2-inch slices)

1/2 lemon

1/2 cup coconut cream (skimmed from the top of a 14-ounce can of coconut milk)

2 tablespoons coconut oil or vegetable oil

2 tablespoons green curry paste (see headnote)

1 1/2 cups canned coconut milk (from one 14-ounce can)

12 ounces chuck roast, cut against the grain and on the diagonal into bite-size pieces

2 phrik chi fa (fresh Thai long chiles; may substitute 1/2 green bell pepper), cut lengthwise on the diagonal into 1/4-inch-wide strips

2 tablespoons fish sauce

2 teaspoons packed grated palm sugar (may substitute 1/2 teaspoon granulated sugar)

1/2 cup packed Thai basil leaves (may substitute Italian sweet basil)

DIRECTIONS

Place the eggplant pieces in a bowl of water with a squeeze of lemon juice.

In a 2-quart saucepan, combine the coconut cream, coconut oil and curry paste over medium-high heat and stir until the paste is fragrant and the coconut fat separates (youll see shiny droplets of fat on the surface), about 2 minutes. Add the coconut milk and beef and bring to a gentle boil, stirring occasionally. Cover, lower the heat to a simmer, and cook for about 15 minutes, stirring occasionally.

Drain the eggplants and add them to the pan along with the chiles, fish sauce, sugar and, if necessary, just enough water to keep everything submerged. Turn up the heat just enough to return the curry to a simmer, cover and continue to cook until the eggplants are tender, 5 to 7 minutes.

Taste for seasoning. No more sugar should be added, but more fish sauce may be needed. When the flavor is to your liking, remove the pan from the heat, stir in the basil leaves and serve.

Charoen Pokphand Foods PLC (CPF) together with Charoen Pokphand Group organised a number of events on 13 October to mark the 4th anniversary of His Majesty King Bhumibol Adulyadej The Great's passing.

Overwhelmed by the gratitude to King Rama IX who had devoted himself for Thais' well-being throughout his long reigning period, CPF's executives and employees stationed in Bangkok, provinces and abroad gave alms to monks and joined commemorative events in tribute to the late His Majesty. In Bangkok, an alms-giving ceremony was organised at CP Tower Silom and CPF was one of private organisations participating in a public event to give food to 89 monks and novices, lay garlands and pay respect to the late His Majestys portrait at Sanam Luang. In provinces, for example, the feed mill at Bangna KM 21 and the water animal feed mill in Ban Bueng, executives and employees were invited to a ceremony to give monks dried food and pay respect to the late His Majestys portrait as a way of remembering the unfathomable depths of his benevolence.

The executives and employees of CPF abroad, Thai and foreign, were invited to commemorative events. CP Vietnam together with the Thailand-Vietnam Business Council hosted an event to present necessities to 8 monks at Buu Long Temple in Ho Chi Minh City. Joining the event were executives, employees and Thais residing in Vietnam.

In Cambodia, Thai and Cambodian executives and employees of CP Cambodia joined Thais in Cambodia in a merit-making event at the Royal Thai Embassy in Phnom Penh. CPF Philippines livestock business organised a ceremony to pay respect to the late His Majestys portrait at the headquarters in Manila, while the aquaculture business hosted a commemorative social event whereby executives and employees handed out lunch, consumer products, face masks and alcohol to an orphanage in Bataan Province.

At the head offices of CPF abroad such as India, Laos, Malaysia and Turkey, food was presented to monks and organisation members paid respect to the late His Majestys portrait. On the day, all executives and employees in Thailand and abroad wore yellow shirts, showing the world their unwavering loyalty and gratitude to King Rama IX who will forever stay in Thais hearts.

The event was held in Ho Chi Minh City by the Investment and Trade Promotion Centre (ITPC) of Ho Chi Minh City in partnership with Central Retail Vietnam.

ITPC Deputy Director Tran Phu Lu said that Thailand is the Vietnams largest trade partners in ASEAN, noting that import and export revenue between Vietnam and Thailand in the 2016-2019 period accounted for 30% of Vietnams total import and export revenue from all countries in ASEAN.

Vietnams export revenue to Thailand makes up one fifth of Vietnams total export revenue from ASEAN and Thailand always maintains its position as the largest export market of Vietnam in ASEAN. However, Vietnam always posts a trade deficit with Thailand.

Through Central Retail, one of the leading retail groups in Thailand, Vietnamese enterprises are expected to bring their products to the Big C supermarket chain and export to Thailand in a bid to ease negative impacts from the COVID-19 pandemic, restore business activities, and expand markets.

Enterprises were also informed of the needs and tastes of Thai consumers as well as the opportunities and challenges in selling goods in this market. At the event, Vietnamese enterprises were also given the chance to introduce their products to Thai enterprises through virtual platforms.

Thailand, Vietnam caught in the line of fire from increased storm activity – The Phnom Penh Post

Three storms could be heading Thailands way and nine provinces in the Northeastern region could face the direct impact, the Thai Meteorological Department has warned.

Kornrawee Sitthichivapak, the departments deputy director-general, said tropical storm Linfa that is covering Laos has weakened to monsoon depression which would soon reach Thailands Northeast, affecting Mukdahan, Roi Et, Yasothon, Amnat Charoen, Ubon Ratchathani, Sisaket, Surin, Buriram and Nakhon Ratchasima.

The monsoon trough and southwest monsoon are other factors that would increase the volume of rain in provinces in the southern region, such as Phetchaburi, Prachuap Khiri Khan, Krabi, Phuket, Phang-nga, Satun and Trang.

Moreover, Thailand might also be confronted by a depression in the South China Sea becoming a tropical storm, while a low-pressure area near the Philippines had the potential of growing stronger.

Vietnam braces for typhoon

Meanwhile, ongoing heavy rains and flooding has killed 20 people in Vietnams central provinces, and 14 more have been reported missing, as the country braces for the seventh typhoon to hit this year.

The National Centre for Hydro-Meteorological Forecasting on Monday afternoon said the low pressure out in the north of the South China Sea (known in Vietnam as the East Sea) had strengthened into a typhoon internationally known as Nangka.

Nangka is forecast to make landfall in the north-central part of Vietnam on Wednesday, while the accompanying rains could cover the central region already battered by torrential downpours over the last few days.

The centre forecast that central provinces would face heavy rains ranging from 150 to 300mm on Tuesday and Wednesday.

The National Steering Committee for Natural Disaster Prevention and Control issued an urgent letter on Monday asking the bureau to closely supervise the development of the low pressure system and issue warnings to localities and ships.

Ministries, sectors and localities were instructed to cooperate with and supervise boats and ships operating in danger areas, and keep in contact with their owners.

Authorities also instructed boats and ships to find safe harbour and to take measures to ensure the safety of local people and tourists on islands and in coastal areas.

Aquaculture farmers should be kept informed of the development of the low pressure system, the letter said.

The Ministry of Foreign Affairs was also asked to contact countries and territories to ask for shelter for Vietnamese fishermen.

Deluge

The ongoing downpour, exacerbated by Typhoon Linfa which hit the central region on Sunday morning before weakening to a low pressure area, destroyed a total of 382 houses and flooded 109,034 others, and damaged 108 sections of national highways and 8.6km of provincial highways.

The disaster caused big losses to agricultural production by destroying 584ha of rice, 3,879ha of vegetable, 2,141ha of aquaculture, whilst killing about 150,700 cattle and poultry.

In Danang, many communes were submerged by rising floods worsened by water discharged from hydropower reservoirs.

As of 7am on Monday morning, the communes of Hoa Phong, Hoa Nhon, Hoa Lien, Hoa Khuong, Hoa Chau and Hoa Tien were badly submerged, affecting the lives of 3,000 local households in 38 hamlets.

In the mountainous districts of Hoa Vang, Lien Chieu and Cam Le, there was high risk of flash floods and landslides.

At present, 882 households in typhoon-affected areas have been moved to safer areas.

Meanwhile, people in the central province of Thua Thien-Hue are entering their fifth day of flooding and heavy rain.

Rainfall of over 1,000mm flooded areas near the Bo River, badly affecting to districts of Phong Dien and Quang Dien, as well as Huong Tra township.

Local people have been suffering from food shortages due to disrupted transport.

Hoang Sinh, a resident of Phong Hien commune, told Vietnam News Agency that his familys food reserves were running due to the prolonged rain and flooding, and they were down to a few packs of instant noodles and rice.

Tran Duc Thien, chairman of Phong Hien commune, said the local government was trying to reach local households to supply food, drink and medicine.

The floods surged rapidly and people in low-lying areas could not keep up. Water spilled into their houses submerging them up to 1m, said Tran Van Hoan from Huong Tra township.

The whole family had to move to a neighbours house. For several days, we only had instant noodles to survive, said Hoan.

This is the worst flood since 2006. It has badly affected 70 per cent of local people, said Pham Cong Phuoc, vice-chairman of Quang Thai commune.

The provincial Steering Committee for Natural Disaster and Rescue reported that as of 6pm on Sunday, three people had died, while seven were injured and another was missing.

Nineteen houses had, and 53,385 houses and 360ha of crops had been flooded.

More than 100km of coastline from Huong River across Huong Tho commune and Huong Tra township was severely damaged by erosion. About 300m of the dyke in Quang Phu commune, Quang Dien district was also hit.

In Hue, more than 50 per cent of roads in 27 wards and 2,560 houses were flooded as of Monday morning.

In Quang Tri province, the flooding dramatically increased on Monday morning.

From late on Sunday night, in the upstream area of the Thach Han River, 152 to 277mm fell in Dakrong district.

The downpour made the water in the Thach Han and O Lau rivers reach alert levels.

The river water levels were forecast to continue rising today and next days.

To cope with the situation, Quang Tri authorities have asked the central government to supply materials and rescue equipment, including two amphibious vehicles, 27 boats, rescue equipment and chemicals for disinfection.

The week-long rain killed six and injured two in the province, with a further six reported missing in the province.

Sections of National Highway 9, the Ho Chi Minh Trail and main roads in the mountainous districts of Dakrong and Huong Hoa have also been badly damaged.

5 principles to help you deal with adversity and come back stronger

We aspire to become and achieve many different things in our lives, and it all begins at a young age. But the reality is, life doesnt always offer us an easy path toward all our goals. There are many challenges on the way in our quest to fulfill our aspirations.

Based on our experiences and knowledge, we all react differently in different situations. But no matter how differently we react, at some point we fall. This is where resilience comes in. No matter what life throws at us, resilience is what helps us learn the lessons of experience and get back on track as quickly as possible.

In the past week, I had a great opportunity to discuss the topic of resilience during the Techsauce Global Summit. Understanding resilience and how it affects you is very important. Resilience is all about how we bounce back from every adversity we face. Throughout our lives, were going to face many different problems. But how do we recover quickly? Here are 5 principles of personal resilience we can begin with.

The first principle is gratitude. Zig Ziglar, the American author, salesman and motivational speaker once said: Gratitude is the healthiest of all human emotions. This is true in many ways. Without getting into the neuroscience of it, gratitude correlates to the positive feelings within us. With this positive energy, resilience thrives as every challenge faced makes us grateful for the lessons we will learn.

The second principle is compassion. Compassion doesnt necessarily mean only toward others, but also toward ones own self. Sometimes, we make mistakes and fail and the biggest critic we face is ourselves. Be more compassionate to yourself and learn from those mistakes so you can bounce back quickly.

The third principle is acceptance. Sometimes, the reality of our situation is hard to accept. We have experienced being in denial after adversity has hit us. But acceptance doesnt mean being okay with the bad things happening to us; it means accepting that reality can be tough and that we must do our part to control the things we can control and accept those we cannot.

The fourth principle is meaning. It is only human of us to find meaning in our lives through positive encounters. However, through adversity, meaning and value can rise. Finding meaning in challenges can help us grow in many ways and also build our strengths to face future, similar adversities.

The final principle is forgiveness. This is the most difficult thing to do, but also very important. It is forgiveness that allows us to set aside those things holding us back. Challenges arent the only things that stop us from succeeding, and sometimes theres some things we cannot let go. Forgiveness can help us let go of the things that stop us from getting back on track.

While these principles are things we need to work on daily, here are some tips to kickstart your journey and practise so that you can strengthen your resilience to meet goals in career and life.

First, become more self-aware. We need to understand that our usual ways of doing things may not work since our world has shifted to a new situation and context. Becoming more self-aware of what works and what doesnt will be an important part of the learning curve.

Additionally, self-awareness isnt just about knowing the situation. It also helps us understand ourselves and where we stand in the current situation. This is especially relevant to the third and fourth points mentioned above, where we begin to develop ourselves in ways to strengthen our resilience.

Second, strengthen your foundation, beginning with mindset. There are a lot of great mindsets we can develop to support our resilience.

Finally, set actionable goals, whether its with work or life. While resilience first and foremost is about getting back up from a fall as quickly as we can, it is also about what we must do next. We cannot just get back up and continue with the same old ways.

Resilience is an essential skill to help us face all kinds of adversity in our work and lives. While it can be applicable to organisations and businesses as a whole, it all begins with the individual resilience. Id like to leave you with a quote for inspiration from Maya Angelou, an American poet, and civil rights activist. She said: I can be changed by what happens to me, but I refuse to be reduced by it.

Every new year we are supposed to make resolutions. Some are about losing weight, others are about working harder or even spending more time with family and friends. My favorite is the annual goal of working out to get into better shape.

This year, my goal is to have a flatter stomach and maybe even a six pack that you see on the TV commercials for gym equipment. Therefore, I will set my sights on 18,250 sit-ups and that should wrap it up.

Thats the goal for the year and it is a finite number that I not only wrote it down, but have it stuck in my head for me to accomplish this year. Well, as we both know thats a pretty big number and it kind of sticks out at you. I have another way to look at this, how about 50 sit-ups per day. If so, fairly easy to do and maybe a three- to five minute routine. This way by the end of the year I will hit my magical work out number of 18,250.

Whats the point here? Simple, break things down into bite-sized pieces. This way they are easier to digest and the goals can be reached with more consistency and discipline. Trust me, even if you did 18,250 sit-ups in one session, the results will not last long.

Look at this in a simple phase: A goal without a plan is a wish. We wish to do things, but we plan out our specific goals. Zig Ziglar, the motivational speaker summed it up perfectly when he said Isnt it amazing how much stuff we get done the day before our vacation. It seems we always put off the things we do not want to do, and we always find time for the things that bring us pleasure.

Setting goals is not that difficult when you keep in mind the four basic rules:

It has a specific time frame (days, weeks, or months).

It is measurable (so you know when youve achieved it)

It is realistic (so you dont get frustrated and give up).

It is challenging (so you have a sense of accomplishment).

If you keep in mind a little common sense, do what you think is right, and most importantly set aside the time to accomplish your goals you will find out that you have achieved what you originally set out to do.

In the workplace sometimes we are either given too many things to do, try to accomplish too much in a short time frame or give ourselves self imposed deadlines that can be unrealistic. The key is to sometimes strategize with yourself what can be done, which task needs priority and what the outcome will be.

We have more stress in our lives due to the onslaught of technology. As we are trying to accomplish one thing, either the texts, emails, telephone calls or notifications come in which can cause distractions, frustrations, or even anxiety. What I have been trying to say is do what you can, break things down into smaller pieces and do your best, and above all enjoy the day. You might find little more peace and happiness that way.

ATHENS Georgia has won its first three games by an aggregate score of 108-37, this in the SEC, where only two undefeated teams remained so early in the season when the Bulldogs left the field Saturday. But thats not the biggest reason we can look at the Bulldogs as having national title potential. The reason the bar is so high for Georgia this season is how often it managed to walk face-first into that bar Saturday and still beat a pretty good Tennessee team 44-21.
