Vegan Recipes by Angela Liddon | Oh She Glows

This past year was easily my most memorable on record. It started with finding out we were expecting early in January, then it was a move and a several month house renovation (I do not recommend this while pregnant, hah), my first cookbook released in March, September brought the birth of our baby girl, and in November the launch of a new business most of these things were going on at the same time throughout 2014, including nurturing and growing this recipe blog and a new baby blog. I know Im forgetting some things. My head is spinning just thinking about everything that happened. It was a complete whirlwind with many unexpected highs and inevitable lows, but I leave the year feeling extremely grateful with many lessons in hand and a heart filled to the brim.

The greatest blessing of my life happened this year the birth of our daughter and in the blink of an eye my entire life was changed for the better. I dont know how I ever lived without this smiley, charming, squirmy baby girl. During late winter and early spring, in my first trimester, I had major anxiety about how I would handle my role as a parent. Had I made the right decision? How would I balance being a parent and my career? It kept me up at night with worry. I was never the girl who just knew Id be a mother some day. All my friends would talk about their baby fever and I couldnt relate at all so I started to think that I just wasnt cut out for it. Maternal instincts seemed foreign and babies scared the bejesus out of me. For real! I felt so awkward around them. But over the years, gradually, we decided it was something we both wanted and that fear was the only thing holding us back. I guess the uncertainty was to be expected though. There were many low days during my first trimester (many of which were likely hormone driven) including Sketchies heartbreaking diagnosis and subsequent treatment but thankfully my doubts faded as the pregnancy went on. The moment Adriana was placed into my arms, I knew everything was how it was always meant to be. I just knew wed figure it out. Ive struggled with the desire to control things in my life for so long and finally, I learned how liberating it can feel to just take things as they come. You hear people say it all the time, but I honestly never knew my heart could love someone so much. That kind of intense love is an extremely powerful motivator theres no more questioning, you just do what needs to be done and thats that.

The New Year is shaping up to be a busy one once again, but my growing baby is a refreshing reminder that the smaller moments in life are the best. They are what make me truly happy. Im trying to embrace the little (yet powerful) things more and let other things slide when they need to. Its not easy. Im hoping 2015 brings more inner peace, balance, and calmness, but I will have to do the work to make that happen because as we all know, it just doesnt magically fall into place; whatever it is that we want only comes with a lot of hard work and perseverance. Oh, and laughter. You need that ingredient for success. Not to mention, realizing that nothing will ever be just right all at the same timeand thats ok.

Thank you wonderful people for coming here each week and making this work that I do so very rewarding. For caring about my stories, embracing new recipes, and sharing a glimpse into your own life. I am constantly amazed by the beauty of your words and the stories you share with me. I wish you all the best that 2015 has to offer, including healthy, veggie-filled meals that renew your excitement whenever you sit down for a meal.

In the spirit of a fresh start, lets cue the token salad recipe to kick off another year of healthy, feel-good recipes! Im going to skip the whole oh Ive been eating too many sweets and need to eat more veggies spiel (totally true though) and just get to the recipe because its a good one!

Ive never been one to think that a salad should be a punishment food. A good hearty salad is a cause for celebration. Call me crazy, but I tend to get as excited about a good salad as I would a rich dessert or sheet of cookies. Or a pan of roasted brussels sprouts, for that matter. Its the small things, it really is.

Vegan India!

Article by Dr. Arun Rangasamy and Uthra

For many animal welfarists (and perhaps some vegans) in India, Karuna Society for Animals and Nature needs no introduction, thanks to the Plastic Cow Project(1). As one would expect, the Plastic Cow Project is one among the list of impressive projects implemented by Karuna Society. We were fortunate to get the chance to visit Karuna Society and interact with its President, Clementien Pauws and Vice-President, Romula DSilva. We believe that many vegans would be pleased to know more about the activities of Karuna Society. We are happy sharing about the visit on our blog.

It is common to find many differently-abled dogs and cats at veterinary hospitals-cum-shelters, but what makes Karuna Society special is that it hosts a variety of animal species dogs, cats, a large number of rescued cows, bulls, and buffaloes, and also a few equines, monkeys, and even a camel that was rescued from slaughter. We also got the chance to meet a couple of peacock and deer visitors at the hospital.

For many animals in the shelter (particularly the ones who have lost their limbs and the abandoned or rescued), Karuna Shelter is their home. Karuna Shelter hosts the rest of the animals (those admitted for ABC and treatment for particular injuries or diseases, with or without foster parents), until they recover, or sometimes even throughout their lives.

Vice President Romula DSilva took us on a tour of the shelter, providing us information about Karuna Society and introducing the inmates. These animals are brought in either by people (foster parents or public) or those involved with Karuna Society (including Romula and her daughter, Roshni) on receiving information about them. We were dumbfounded when Romula introduced us to a non-human visitor (a wild monkey engaging the permanent monkey-residents, who have lost most of their limbs)! Although the visitor monkey is very mischievous, he gets his share of goodies (including yummy organic mangoes) that his friends are treated to.

While seeing an isolated rabid dog who had arrived at the shelter a short while ago made our heart heavy, the selfless work Karuna Society is doing, the dedication of its employees, and a brief meeting with a foreign volunteer (a woman attending a dog with ticks) moved us deeply. Romula later informed us that sometimes young volunteers from different countries take time from their vacation in India to serve the animals at Karuna Society.

Puttaparthi is largely a vegetarian town and after our visit to the shelter, we had a sumptuous vegan meal at a vegetarian restaurant with Romula. Romula, who along with a healer friend, was originally interested in establishing a center that cares for aged and terminally ill humans, recollected how Sri Sathya Sai Baba influenced her to shift her focus to non-human animals, how she met Clementien and they came together to start Karuna Society for Animals.

Romula also informed us about the organic products for sale at the Karuna Organic Shop. The shop sells organic and fresh vegetables and seasonal fruits, as well as a host of other products including the single ingredient organic peanut butter (one of the sweetest foods we have ever had!), roasted organic sesame seeds, organic lemon grass, and more.

Going to Puttaparthi just to get hold of the sweet and flavorful organic mangoes is worth the effort. Romula, who is also involved in instilling compassion in local schoolchildren, runs the shop that also serves as an information center for Karuna Society.

After lunch, we visited Karuna Societys organic farm that produces raw materials, greens, herbs, seasonal vegetables, and fruits for Ahimsa Organic Products Pvt. Ltd., whose profit goes back into Karuna to serve the animals. We also got a chance to interact with Clementien, President of Karuna Society, who manages the farm.

Edgar's Mission 2015 Calendar: Edgar's Mission is an animal sanctuary in Australia that does some amazing work, and you can support their important mission to save innocent creatures from ending up on a dinner plate by getting their calendar. It's full of the CUTEST pictures ever. You kinda have to get it just to see the baby pig learning to walk again with training wheels. It's printed on recycled paper using veg-based ink in a solar-powered plant.Grab it herefor $20.00!

Dr. Martens Vegan Leather 3-eye Gibson Shoes: I love these, and it's hard to tell they are vegan leather. I have run into some folks who don't believe it! They are great for basically any outfit, fancy or casual. They will last you a lifetime, so think of them as an investment. I wish the company was 100% vegan, but I feel like buying their vegan shoes is still a positive move, since it nudges them in the right direction. "Psst.. Doc Martens! Go vegan!" I got mine at Nice Shoes.

Gray and Pink Dress from Maya Epler: Maya is an inspiring woman. She designs and makes all the pieces from her clothing line herself, and she is now Peta-approved as a totally vegan company! I love the dress she sent to me, it's unique, comfortable and sexy. Check out all her fab items here.

Harmonic Arts (Ginger Root Powder): Harmonic Arts Botanical Dispensary is right by me! They are located on Vancouver Island and source many of their ingredients from the wild, or at least organic farms. I love all their products and recently featured their coconut in this recipe. They have an extensive selection of healing, medicinal tea blends. Take a look at all their products here.

Park Woodshop (Spoon and Cutting Board): I LOVE everything Park and his partner, Leslie, do. They take gorgeous photos, consume lots of tea and super foods, and create stunning, functional wooden tools from sustainably harvested trees. Who doesn't want a hand-carved spoon for Christmas!? See more from them here.

The Veggie Republic Bracelet: vegan jewelry for everyone! This bracelet is wooden and each bead is embedded with a picture of a different vegetable. The company is run by a mum and daughter, and for every bracelet you buy, they donate 5 lbs of fresh produce to a local family in need! Gifts that give to more than one person are the best kind. Get a better look at the $14.99 bracelets here.

The Soap Dispensary (Jars): The Soap Dispensary is a lovely little shop on Main Street run by Lihn and her husband. They sell EVERYTHING that is home, bath and body related with an eco-friendly, organic, local vibe. They have a great selection of jars and everything else. See more from them here. The jar + lidI bought was $1.75.

Organic Burst Superfoods (Baobab and Wheatgrass): Organic Burst is terrific company selling high quality organic super food powders and supplements. Their products are vibrant, delicious, and fun to add to raw desserts, oatmeal, smoothies and juices. If you know someone who needs an extra nutrition boost, consider buying some goodies from Organic Burst.

PHILADELPHIA (CBS) If you are looking to get rid of a few pounds in the New Year, a trend which started last year in Great Britain might be the way to go.

Its called Veganuary: going vegan for January.

Last year around this time, two dedicated British vegans started a web site to promote veganism in January. They dubbed it Veganuary. Rachel Atcheson, with the Philadelphia-based Humane League, explains.

It is a small nonprofit that is trying to encourage folks to take a pledge to go vegan in January, kind of as a start to the new year, a fresh start, and hopefully a start to a new part of their diet, she says. And she explains why she is vegan:

I have been vegan now for five years due to my concern for global poverty, global hunger, as well as seeing the animal cruelty that is todays factory farm system.

But, she says, you may have your own reasons to try veganism.
