‘Veganuary’: three mouth-watering vegan recipes

Call me crazy, but I like to think of this as a semi-virtuous winter salad. When youre surrounded by calorie laden comfort food yet cant face lettuce and dressing, this is the dish to satisfy those cravings without the often ensuing guilt. The sage and rosemary are crucial in making this recipe seasonally apt (I do try!), with the lightly toasted almonds lending some much-needed crunch for me, texture in vegan food is the key to a winning dish, and this one succeeds on all fronts. As a side or on its own, its a super-easy option when those early evenings start to creep in, and means you can settle down to a box set safe in the knowledge that your couch-potato ways are somewhat negated by this healthy evening meal. Well, sorts.

INGREDIENTS 1 squash or gourd (about 500g), peeled, halved, deseeded and cut into small chunks 2 tablespoons sunflower oil 1 sprig rosemary, leaves finely chopped 1 tablespoon finely chopped fresh sage 250g couscous or giant couscous 200g frozen peas 60g flaked almonds, toasted 3 tablespoons extra virgin olive oil Sea salt Freshly ground black pepper

METHOD Preheat the oven to 200C/gas mark 6.

Place the squash in a roasting tin, drizzle over the sunflower oil, sprinkle over the herbs and season well. Roast in the oven for 1 hour or until completely soft. Turn the oven off but leave the squash in the oven until needed.

Soak the couscous in an equal volume of freshly boiled water, cover and allow to stand for 10 minutes to absorb the liquid before fluffing with a fork.

Defrost the peas by covering them with freshly boiled water, leave for 5 minutes and then drain.

Remove the roasted squash from the oven and stir through the couscous, peas, almonds and extra virgin olive oil. Season to taste and serve warm.

SERVES 46

For some people chilli without meat just doesnt make sense (its full title is chilli con carne after all). But because its one of my favourite dishes to serve at parties, I had to find a way to overcome (and perhaps overcompensate for) the lack of flesh. Thankfully my hard work paid off and heres a gutsy chilli to satisfy all tastes in fact Ive even seen some of my meat-fiend mates go back for seconds, thirds and more.

Vegan nutrition refers to the nutritional aspects of vegan diets - diets which include no animal products.

Poorly planned vegan diets can be deficient in vitamin B12, vitamin D, calcium, iodine, iron, zinc, riboflavin (vitamin B2) and omega-3 fatty acids.[1]

Doctors Dean Ornish, T. Colin Campbell, John A. McDougall, Michael Klaper, Caldwell Esselstyn, Michael Greger, Joel Fuhrman, and Neal D. Barnard claim that high animal fat and protein diets, such as the standard American diet, are detrimental to health.[2][3][4] They also state that a lifestyle change incorporating a vegan whole foods diet could not only prevent various degenerative diseases, such as coronary artery disease, but reverse them.[5][6][7][8][9] A number of documentary films, such as Fat, Sick and Nearly Dead, Planeat and Forks over Knives, focus on the purported health benefits of plant-based diets. Although there is general consensus amongst doctors advocating plant-based diets, Joel Fuhrman and Michael Greger have disagreed with Campbell and Esselstyn on the use of nuts and seeds.[10]

Some top athletes, such as Brendan Brazier, follow a vegan diet, including raw veganism.[11] Vegan diets tend to be higher in dietary fibre, magnesium, folic acid, vitamin C, vitamin E, iron, and phytochemicals, and lower in calories, saturated fat, cholesterol, long-chain omega-3 fatty acids, vitamin D, calcium, zinc, and vitamin B12.[12] Because uncontaminated plant foods do not provide vitamin B12 (which is produced by microorganisms such as bacteria), researchers agree that vegans should eat foods fortified with B12 or take a daily supplement.[13]

Poorly planned vegan diets may be low in vitamin B12, omega-3 fatty acids, vitamin D, calcium, iron, zinc, riboflavin (vitamin B2), and iodine. The American Dietetic Association and Dietitians of Canada state that well-balanced vegan diets can meet all these nutrient requirements and are appropriate for all stages of the life cycle, including during pregnancy, lactation, infancy, childhood, and adolescence.[14]

Vitamin B12 deficiency is potentially extremely serious, leading to megaloblastic anemia, nerve degeneration and irreversible neurological damage. [15]

Evidence suggests that vegans who are not taking vitamin B12 supplements do not consume sufficient servings of B12 and often have abnormally low blood concentrations of vitamin B12.[16] This is because, unless fortified, plant foods do not contain reliable amounts of active vitamin B12.

Proteins are composed of amino acids and essential amino acids cannot be synthesised by the human body. A 1994 study found a varied intake of such sources can be adequate.[17] The source and composition of vegan proteins have been associated with a reduced risk in cancer and other comorbidities including cardiovascular disease.[18]

Vegan diets can be low in omega-3 fatty acids (O3FA). Major vegan sources of O3FA include algae, hempseeds and hempseed oil, walnuts, flaxseeds and flaxseed oil, olive oil, canola (rapeseed) oil, avocado and chia seeds. However, diets lacking generous amounts of sea vegetables (seaweed) generally lack a direct source of long-chain O3FA such as eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA).[citation needed] Vegan diets, like the standard American diet, may also have a high ratio of O6FA to O3FA, which inhibits the conversion of short-chain fatty acids such as alpha-Linolenic acid (ALA), found in most vegan O3FA sources, to EPA and DHA.[1] Short-term supplemental ALA has been shown to increase EPA levels but not DHA levels, suggesting poor conversion of the intermediary EPA to DHA.[19] DHA supplements derived from DHA-rich microalgae are available,[1] and the human body can also convert DHA to EPA.[20]

While there is no scientific consensus on the role of omega-3 fatty acids, they may reduce the risk of coronary heart disease,[1] lower triglycerides, stabilize mood and help prevent depression, help reduce symptoms of ADD, reduce joint pain and other rheumatoid problems, and reduce the risk of dementia in older age.[citation needed] While there is little evidence of adverse health or cognitive effects due to DHA deficiency in adult vegetarians or vegans, fetal and breast milk levels remain a concern.[19] EPA and DHA supplementation has been shown to reduce platelet aggregation in vegetarians, but a direct link to cardiovascular morbidity and mortality, which is already lower for vegetarians, has yet to be determined.[21]

Akron, Ohio: National animal welfare group PETA is abandoning its idea to turn serial killer Jeffrey Dahmer's childhood home in Ohio, into a vegan restaurant.

"We regret that we won't be able to move forward with this project, even though it was met with some enthusiasm as well as some derisive comments," said Moira Colley, media officer with People for the Ethical Treatment of Animals, in an email on Tuesday.

Last week, the organisation proposed that the home be turned into a vegan restaurant called Eat For Life: Home Cooking. Ingrid Newkirk, PETA's president, sent a letter dated Friday to the real estate agent who has listed the Bath Township house for sale.

Designer/vegan Cornelia Guest launches cruelty-free jacket collection

Designer Cornelia Guest shares her passion for animal-free products through several fashion and food-related endeavors.

The New York-based socialite, who was named "Debutante of the Decade" in 1986 during the International Debutante Ball and counts some of the most illuminating cultural figures past and present as good friends (Truman Capote and Andy Warhol frequented her family parties back when Guest was just a teenager), has since embraced her passion for all things cruelty-free and created several product lines that project her chic stance on veganism and animal-friendly fashion.

Guest designs a vegan handbag line which is carried by Bloomingdales, a vegan cookie line, a vegan catering and events company, plus she authored a cookbook in 2012 called "Cornelia Guest's Simple Pleasures: Healthy Seasonal Cooking & Easy Entertaining." Her most recent endeavor is a capsule collection of cruelty-free jackets with socially conscious online clothing brand, Project Gravitas, projectgravitas.com.

The Cornelia Guest for Project Gravitas collection includes three cruelty-free jackets made of faux leather, with prices starting at $295. The Olive is a bomber-style jacket, The Nelson a cropped, motorcycle-inspired blazer, and The Lyle is also motorcycle-inspired, but with edgy zippers and texture on the arms and shoulders. Guest's designs are the first collaboration for Project Gravitas, which often features powerful female entrepreneurs wearing the brand's dresses on its website.

With an aim to erase the crunchy stereotype often associated with vegan products, Guest has brought her luxe background and aesthetic to synthetic leathers in the hopes of bridging the gap between high-end and flat-out hippie.

"Project Gravitas and I share a passion for creating beautiful and meaningful products," Guest says. "Living a cruelty-free lifestyle doesn't mean you have to compromise on luxury or quality."

It's clear that Guest hardly compromises, having originally launched her handbag line in 2011 after not being able to find any that were both vegan and chic.
