What are Beyonc’s favorite vegan meals? Find out

Posted: at 3:51 pm

Beyonc and Jay Z made a lifestyle change at the end of 2013 when the couple decided to go vegan for 22 days. Thanks to their longtime trainer and friend Marco Borges, the duo succeeded and loved every minute and meal of it. The singer even credited her 65 lbs. weight-loss post Blue Ivys birth to the plant-based diet.

Just how much is the star a fan of her new eating plan? Last week, Beyonc and Marco announced they are launching a vegan home delivery meal service. I am so grateful that I took the challenge and credit Marco with leading by example, Beyonc said in a statement. He came up with a great program to get people motivated to make better nutritional choices.

She continued, All you have to do is try. If I can do it, anyone can. And with the many options offered that Bey, Jay and Marco came up with, trying shouldnt be so hard.

All the meals are incredibly unique and delicious, Marco tells HELLO! It would be difficult to pick just one but some of our [Beyonc and Jay Z] favorites include the hearty breakfast granola, home-style split-pea and vegetable soup, Spanish style paella and gluten-free pesto pasta.

There are certainly more benefits to just shedding some pounds by following a plant-based diet. Marco, who also had Jennifer Lopez participate in the challenge, explains, Its the only proven method to not only prevent and reverse heart disease, but it also reduces the risk of diabetes and certain cancers.

Going vegan is also better on your wallet. A plant-based diet is actually less expensive than an animal-based diet because meat and fish are the higher ticket items, the 22 Days Nutrition founder said.

The organic, gluten-free, dairy-free, soy-free and non-GMO meals for delivery range from $9.76 to $16.50 and are offered through three different plans.

Who is ready to take the challenge? We know we are!

Are you tired of bone broth? Try this vegetarian sweet potato broth instead.

By Joe Yonan Food and Dining Editor February 9 at 7:00 AM

Food trends seem to come at the speed of light nowadays. You hear somebody mention the words bone broth, and you think, Isnt that just stock? The next day you hear it mentioned about a dozen times on Twitter, and you read a piece emphasizing that its so much more than just stock, and the day after that you hear a story about it on the radio explaining that it has to include vinegar, and you spot it on a restaurant menu and see it in little aseptic packages in the supermarket.

A little part of you continues to think, Isnt it just stock? and wishes everybody would just shut up about it, already. And the whole thing reminds you of why you dont listen to commercial music radio anymore: Some perfectly catchy tune is reduced to the most annoying earworm ever just because some DJ has no imagination.

[ Recipe: Sweet Potato, Collard and Black-Eyed Pea Soup]

Anyway, I dont think thats going to happen with another broth I discovered recently. I was flipping through Soul Food Love, Alice Randall and Caroline Randall Williamss new cookbook, looking for ideas, and I saw the most beautiful soup, made of sweet potatoes, kale and black-eyed peas. But the sweet potatoes werent in big chunks, like the carrots. They had been pureed with a lot of water, making a beautiful orange backdrop for the chunky soup.

The three words I read next made me gasp out loud: sweet potato broth. The story is that Alice needed a vegetarian substitute for her classic soup, and she and her daughter, Caroline, came up with the sweet potato idea. Its simple enough: You simmer a cut-up sweet potato with aromatic vegetables and water (and some cloves) until its tender, and you fish out those cloves and puree the rest.

When you use it to make the soup (and sub collards or mustard greens for the kale, if you like), you realize the true brilliance: The broth is thin enough to let the other ingredients take center stage but thick enough to provide just the right amount of body. The recipe makes more than twice as much broth as you need for the soup, but consider it a bonus, because there are lots of other ways I can imagine using the broth. One night this week, Ill make a vegetarian riff on tortilla soup, with black beans and tomatoes.

Sweet potato broth deserves to be trendy, but it probably never will be. And thats fine with me, because I dont ever want to get sick of it.

* Romania will launch the project at the worlds biggest organic food fair, hosted by the Exhibition Centre in Nuremberg

Romania will launch, at BioFach Nuremberg (February 11-14), the worlds biggest fair for organic products, the Bio-Danubius cluster that was set up last week in Tulcea in order to support and promote that regions organic products, tourism and biodiversity.

The Bio-Danubius Cluster was set up, in Tulcea, at the initiative of the Bio Romania Association, alongside local authorities, the Organic Food Research Institute and other entities interested in this project, and its goals are to support and promote organic agriculture products and to put to superior use raw materials, as well as to support biodiversity. The main arguments that led to the setting up of the first bio cluster in Tulcea had to do with the existence of the Danube Delta Biosphere Reservation, but also because in time it had the biggest concentration of organic farmers in Romania. Likewise, the Reservation has environment protection and organic technology standards that are superior to the rest of the country, Bio Romania Association President Marian Cioceanu stated.

The head of Bio Romania believes that the project has the chance of becoming a landmark project for Romania, as part of the Danube Strategy, especially since it can also draw on European Funds in partnership with similar clusters in European Union countries.
