WHEN Veet Karen Hedley dreamed of becoming a chef she found that apprenticeships required handling meat - something this vegetarian was not prepared to compromise on.

"When I was 15, I spent a week in a conventional kitchen on work experience ... and I was ridiculed and laughed at, and was told I would never make it in the world of food if I wasn't prepared to cook meat," she said.

Determined to follow her passion, Veet continued to develop her skills and eight years ago established her vegetarian catering business, Veet's Cuisine, based in Mullumbimby.

Now her passion for vegetables has inspired her open an Australian-first - The Vegetarian Cooking School.

Her chefs' training program will start in May and is geared towards those who would like to run or work in a vegan or vegetarian restaurant or catering business, or for already trained chefs wanting to add more vegetarian food to their menus.

As well as more traditional training modules such as safe food handling and food science, Veet's course will cover raw cuisine, ayurvedic cuisine, macrobiotic and wholefood cooking, as well as fermentation, sprouting and sourdough.

"There is no registered training anywhere in Australia that focuses entirely on vegetarian fare," Veet said.

"I looked everywhere for training and the only one I could attend was one where I would be faced with cooking meat, or watch others doing so, and I was not prepared to compromise my principles or ethics."

When the Northern Star visited Veet there were almonds soaking in water ready to be transformed into nut loaf and a mountain of organic produce being prepared for dishes such as organic tempeh with coriander and macadamia sauce as she prepared to cater for a health retreat for 230 people.

The Northern Rivers was ripe for a course such as The Vegetarian Cooking School, she said.

You've heard this stat before, but it's worth mentioning again: The United Nations has estimated that food production will need to nearly double from 2008 levels by the year 2050 to feed the world's growing population (nearly all from the least developed nations) and make up for shrinking agricultural land. That means that to boost yields and combat pests, farmers will need to increasingly rely on technology ranging from high-yield seeds to agricultural biotechnology to even the Internet of Things.

While progress is being made, consumers in many wealthy nations are demanding that their food be grown using organic farming principles. At a time when the world cannot falter on the path to increasing its food production, these habits can have severe consequences. Some consumers rationalize their purchasing decisions by claiming the health benefits of organic food (which have been thoroughly debunked), the avoidance of health risks associated with genetically modified foods (with which the scientific consensus disagrees), or the more environmentally friendly and sustainable approach to agriculture that organic farming enables.

The last argument might seem the most plausible. After all, organic farming forbids the use of synthetic pesticides, biotechnology, and many (but not all) pesticides. Unfortunately for Whole Foods Market shoppers, the argument doesn't quite hold up, according to shocking numbers compiled by the U.S. Department of Agriculture.

Ouch, organic! Is organic farming really the most sustainable form of agriculture? To answer that, we need to define the word "sustainable" from an environmental point of view. Go ahead, take a minute to think about what the word really means. I'll wait.

If you cheated and looked in a dictionary, then you would have found something similar to this:

That would mean that the most sustainable agricultural methods would maintain natural resources, or in this case, land, to which all other natural resources -- water, soil, energy input, fertilizer use, and the like -- are dependent upon. To use land and derivative natural resources as sustainably as possible requires using the least input to produce the most food. So, how does organic farming stack up?

Not so well, according to numbers from the USDA. When the department logged yield data (food produced per acre) from various crops grown organically, government researchers found that they severely underperformed the same crops grown with more traditional farming methods.

: Justice A.S. Naidu Commission, which is investigating the communal riots of 2008 in Kandhamal district of Odisha, visited Chakapada ashram and riot-affected areas on Sunday.

It may be noted that an ashram and educational institute had been established at Chakapada by Vishwa Hindu Parishad (VHP) leader Swami Lakshmanananda Saraswati, whose murder on August 23, 2008, had sparked off communal violence in the Kandhamal district.

On his way to Chakapada, Justice Naidu visited the Pasara police outpost which had been burnt down during the riots. At the Chakapada ashram, he visited the Sanskrit medium educational institute established by the swami as well as his room on the campus.
