MANKATO, Minn. -

The host of the web show "The Vegan Roadie" stopped by Friesen's in Mankato to cook a vegan meal.

Dustin Harder of Queens, New York is traveling across the US using local ingredients to create meals for his web series.

He's able to travel thanks to receiving over twelve thousand dollars in a Kickstarter campaign, well above his initial request for seventy five hundred.

He creates vegan meals using only the ingredients available at each stop.

Dustin Harder of The Vegan Roadie says, "I will tell you the most surprising town to me so far was Jacksonville, FL...they had so many options, it was amazing. And then the one that's been the hardest so far has been Appleton, Wisconsin to be completely honest."

Harder learned to cook at the Natural Gourmet Institute.

The dish loved by millions of British customers is to get a meat-free makeover that it is claimed will cut carbon emissions by half.

The Swedish firm says producing the new version uses far less energy than making the pork and beef variety.
